1. If you pigeonhole your guests, be even-handed
2. Match opponents evenly
3. Show the full spectrum of opinion
4. Ask the right questions
5. Follow the money
6. Remember your non-news departments

I think the "Senior EU official" is either being a bit deliberately unhelpful there or has not yet been engaged in the negotiations. DC has been round to all his opposite numbers to discuss the future of the EU, and they must have talked about something.
